The Most Delicious Pear Salad Ever! Don't even get me started on how good the dressing is!


You guys! This take a bit of time to prep I am not going to lie. I feel like that's why I am such a "heavy hottie" because it takes some time (Foreverrrrrrr) to prepare healthier meals rather than a quick snack or fast food. I am starting to take the time to get more healthier meals in our every day. I could legit drink this dressing with a straw it's so Delish and you likely have all of the ingredients on hand.

My friend Kara sent me this Allrecipes Roquefort Pear Salad recipe via a text with a picture of a page from an Allrecipes magazine that I am assuming she tore off :) Thanks Kara! I make this on the regular and it is a go-to recipe in this #HotMessExpressMom's kitchen. Add it to your rotation, you can thank me (well technically Kara) later!

I switch it up by adding a cheese that I prefer, dried cranberries and even grilled or rotisserie chicken if I have some on hand. Get creative and use any ingredients you want. Also I use Emerald Glazed Pecans instead of making my own... I mean really, who has time for that! Have you seen their new ad campaign. I love it and I now take my Amazon reviews so much more seriously! #YesGood

Pear Salad

Pro Tip:

Peel the pears

I use Emerald Glazed Pecans rather than making them!

Ingredients

1 head of your favorite lettuce chopped

3 or more pears - peeled, cored and sliced

5 ounces of Roquefort Cheese (I use goat cheese), crumbled

1 avocado - peeled, pitted and chopped (optional)

1/2 cup of green onions thinly sliced

1/2 cup of pecans (I used Emerald Glazed Pecans)

OH SO GOOD Dressing (combine all the below ingredients)

1/3 cup olive oil

3 tablespoons red wine vinegar

1 1/2 teaspoons white sugar

1 1/2 teaspoons Dijon mustard

1 clove, garlic, chopped (I used minced garlic to taste)

1/2 teaspoon salt

Fresh ground pepper

Combine all of the ingredients and pour the dressing over your salad. Sprinkle with glazed pecans and serve. YUM! I make this as a meal on the regular and can easily crush half of it on my own.
