You guys...this is THE BEST pasta salad I ever did have. I make it every time we have a cookout and it's a huge hit! I also make it on the regular during the summer as a side when we cook out on the grill. It is not healthy as it's smothered in mayo, cheese and a sh*t ton of bacon but let me tell you it is so delicious!
Ingredients
1 box of your favorite pasta
2 heads of broccoli chopped
1/2 of a red onion chopped
1 bag of shredded "cabot, seriously sharp cheddar cheese"
1 packaged of bacon cooked, cooled and crumbled
Dressing:
2 cups of mayo
3/4 cups of sugar
2 TBS of red wine vinegar
Salt and Pepper to taste
Instructions
Preheat oven to 400 degrees F.
Combine the ingredients for the dressing, mix well and put in the refrigerator while you prep the rest of the pasta salad.
Line a baking sheet with tin foil and spread the bacon strips in a single layer on the sheet. Bake at 400 degrees F until done, flipping halfway through. Approximately 20 mins or so depending on thickness. Once fully cooked place on a plate lined with a paper towel and put it in the fridge to cool.
Cook pasta al dente drain, rinse in cold water and refrigerate.
Chop the broccoli and red onion and add to a large mixing bowl.
Add the bag of shredded cheese to the same bowl.
Crumble the cooked cooled bacon with your hands or chop with a knife and add to bowl.
Add pasta and top with the dressing mixture.
Combine all ingredients cover and refrigerate until it's time to serve.
